Apple Upside
Down Cake
4 tablespoons
butter
1/2 cup sugar
1/4 cup apple cider
4 Granny Smith apples
1/2 cup walnuts
1/2 cup apple cider
1 box yellow cake mix
1/2 cup walnuts
6 tablespoons butter
1 egg
Heat oven to
375'. Place butter, sugar and apple cider in the 12"Family
Skillet over medium heat. Bring to a slight boil, around
10minutes Remove the skillet from heat. Core and thinly
slice the apples. Arrange the apples in the pan, over the
caramel mixture. Place the skillet over medium-high heat.
Boil about 10 minutes, until the sugar mixture becomes caramel
colored. Remove from heat. Rearrange apples, if necessary
to make a pretty design. Coarsely chop the walnuts, sprinkle
between apple wedges. In bowl, place cake mix and 6 tablespoon
of butter. Blend with pastry blender until the mixture resembles
coarse crumbs. Finely grate walnuts into the cake mix. Add
the apple cider and egg. Stir until the mixture is just
moistened (batter will be thick). Spoon batter over apple
mixture. Bake 35-40minutes Cool 10 minutes (no longer!).
Invert onto serving plate
