Carrot Cookies

¾ cup shortening
1 cup sugar
1 egg
1 cup cooked and mashed carrots
1 teaspoon vanilla
¼ teaspoon salt
2 cups flour
2 teaspoons baking powder

½ teaspoon lemon juice

Powdered sugar and orange juice

Method Mix together all ingredients and drop by teaspoonfuls on cookie sheet. Bake at 350?F for 12 to 15 minutes. Moisten powdered sugar with orange juice and frost cookies. Yield: 3 dozen cookies
