Holy Mole Guacamole
4 ripe
avocados
1 medium onion, chopped
1 medium tomato, chopped
1-2 jalapeno chilies, chopped
2 T. cilantro, chopped
2-4 cloves garlic, chopped
2-3 tsp. lime juice
salt to taste
leaf lettuce for garnish
corn tortilla chips, for dipping carrot and celery sticks,
for dipping
Peel
avocados and remove pits. Place all ingredients in a bowl.
Mash until you get the desired consistency-some people prefer
chunky, other a smoother texture. Line a serving bowl with
leaf lettuce; place guacamole in bowl; place one avocado
pit in center of mixture to prevent browning. Chill until
ready to serve. Serve with corn tortilla chips, celery and
carrot sticks. Serves 6-8
