Junk Fried Rice
Peanut oil
2 garlic cloves, sliced
1 tea crushed dried chili peppers
1 1/2 lean bbq pork, ham, chicken or shrimp, diced
1 cup green onion cut into 1/2" pieces
1 red pepper diced (sweet)
1 cup green pepper diced
1 8oz. can water chestnuts drained and chopped
1 2 oz. jar pimientos drained and chopped
1 cup sliced mushrooms
3 cups re-cooked cold rice (at least 2 days in advance)
1/4 cup light soy sauce
1 TB sake or sherry
1/2 tea sugar
1 egg, beaten
Add 2 TB oil to preheated wok, swirling to coat sides. Add
1/2 the garlic and 1/2 tea. red diced chili pepper. and
cook over med. heat till garlic is brown. Discard garlic.
Add meat and stir fry l min. Remove and drain on paper towels.
Add another 2 to 3 tbs. oil to wok. Add onion, peppers,
water chestnuts, pimientos and mushrooms. Stir fry 2-3 mins.
Remove and let drain on paper towels. Add 1 1/2 TB oil to
wok, swirl. Place rice in wok and toss to coat with oil.
Cook 2 mins. Return vegetables and meat and mix well. Mix
together soy, wine and sugar. Add to rice. Add egg and cook
about 30 seconds
