No-Guilt Shrimp
Salad or Dip
Makes 10 luncheon servings, 25 party-dip
servings
½ cup bell pepper, chopped
½ cup celery, chopped
½ cup green onion tops, chopped
¼ cup radishes, chopped
½ cup sharp Cheddar, chopped in small cubes
3 Tbsps. sweet relish, drained
1½ cups small curd cottage cheese
2 lbs. well seasoned boiled shrimp, chopped coarsely
4 Tbsps. French onion dip
Large
dipping corn chips or crackers. Toss together all ingredients
except onion dip and chips; blend together well. Fold in
French onion dip. For a luncheon item, serve on lettuce-lined
plates, garnished with tomato wedges and avocado slices.
