Oatmeal Cookies
(Low-Carb)
3/4 cup margarine
2 cups Splenda
1 cup fruit puree (All-Fruit preserves)
1 tsp vanilla (or other extract)
1 & 1/2 cups whole wheat pastry flour
1 cup oat flour
2 cups rolled oats (old-fashioned oats)
1/4 cup oat bran
1/2 cup almond meal (finely-ground almonds)
1 tsp baking soda
3/4 tsp salt
1 cup raisins, other dried fruit (chopped), chopped nuts,
sugar-free chocolate chips,or a mixture of any of these.
Cream margarine
and Splenda together. Mix in fruit puree and extract. Mix
together the flours, oats, bran, nut meal, and baking soda.
Add to the sugar mixture. Stir in raisins, chocolate chips,
etc. Drop spoonfuls onto greased cookie sheets. Bake at
350 F for 8 - 11 minutes. Do not overcook.
