Sour Cream Cauliflower

1 head cauliflower, trimmed
1 T. white wine tarragon vinegar
5 T. buttersalt
1 C. sour cream
1/3 C. fresh bread crumbs

Preheat oven to 350 degrees F. Steam cauliflower in 1/2 inch water and vinegar for 10-15 minutes. Whena sharp knife will just penetrate the heart of it, remove and place upside down in a bowl. Cut about 2 T. of butter into bits. Sprinkle cauliflower generously with salt. Dot cauliflower with bits of butter so it melts down into the branches with salt as it sits. Place cauliflower right side up in a baking dish that is about it's size - a souffle dish is excellent. Sprinkle with more salt and about 1 T. more butter, in dots. In a frying pan, melt the remaining 2 T. butter, add crumbs, and stir over medium heat until golden. To cook the dish: spread sour cream thickly over cauliflower, sprinkle butter crumbs over and bake 30minutes at 350 degrees F. To serve: slice in pie-shaped wedges. Makes 4 servings.
